This manual pour-over style method consists of a narrow-waist glass flask with proprietary paper filters. These filters are thicker than ordinary coffee filters, removing most coffee oils from the brew.
WHAT YOU NEED
– Pre-folded Chemex Filters
4 tbsp (32 grams) coffee and 3 cups (444 grams) water
6 tbsp (48 grams) coffee and 6 cups (880 grams) water
8 tbsp (64 grams) coffee and 8 cups (1182 grams) water
10 tbsp (80 grams) coffee and 10 cups (1478 grams) water
AT A GLANCE
– Grind: Medium
– Filter: Only Use Chemex Filters
– Place grounds in filter
– Let bloom for 30 seconds
– Pour water in a circular motion
– Ready 3 to 3 1/2 Min.
*grind should resemble kosher salt.
NO. 6 – SLOW & STEADY
Now pour just enough water (30 seconds off the boil or about 205 degrees F) to saturate the grounds and let it bloom for 30 seconds. The fresher the coffee, the more of a bloom you will see.
